How To Make Perfect Vanilla Cupcakes

Come winter, it feels like everyone’s birthday – to me, my daughter, my sister, my best friend, the list goes on and on! Is there anything better than celebrating vanilla cupcakes? I do not think so! Cupcake dishes are a lot of fun to bake and eat!

It took me years to figure out which cupcake would be the best and what a cupcake recipe it really should be! These classic vanilla cupcakes are the perfect recipe for a soft cupcake and birthday party. Once you enjoy this delicious recipe, it will soon become your favorite vanilla cupcake recipe! When you feel the need to use vanilla cake box mix, I can assure you that the vanilla flavor is deep in these simple vanilla cupcakes!

To ensure wet cupcakes, make sure to use a measuring cup to flush out your dough. You can read my guide to baking basics and I’ll talk about what that means. Excess flour will form dry, dense cupcakes.

Perfect Vanilla Cupcake Recipe

2 1/2 cups all purpose flour
2 cups sugar
3 tablespoons baking powder
1 tablespoon salt
2 cups whole milk
1/2 cup vegetable oil
1 tablespoon vanilla extract
2 large eggs
Don’t forget to use room temperature products for best results.

In a separate bowl, add your dry ingredients – flour, baking powder and salt.

Paddle paddle or electric mixer in a mixer bowl, with cream butter and sugar. Add wet ingredients on low speed – milk, oil, vanilla and eggs. Add the remaining flour to the mixture and mix on medium speed. Wipe the sides of the bowl and mix until all the ingredients are well combined into a smooth batter.

Line muffin tins with cupcake liners (cupcake paper liners or silicone liners work well). 12-cup muffin pans work best.

For best results, use an ice cream scoop to get your cupcake batter on the liners.

Two scoops are available for each cupcake liner, the same size and bake evenly for each cupcake. If they vary in size, the baking time will stop.

Bake your homemade vanilla cupcake for an recommended cooking time of 25 minutes with an oven temperature of 350 degrees.

Instruction

  • Preheat oven to 350 degrees.
  • Separate the flour, sugar, baking powder and salt.
  • Then mix the milk, oil, vanilla and eggs.
  • You can use a hand mixer or you can use your stand mixer. Mix at medium speed until all ingredients are well combined.
  • Fill your muffin box with cupcake liners. I like to use a cookie scoop to glue the cupcake batter to the liner.
  • Two scoops are available for each cupcake liner.
  • Bake the vanilla cupcakes for about 15 minutes or until the cupcakes are clean in the middle.
  • Let the vanilla cupcake cool completely before freezing with your favorite frosting recipe!
